If you go over the spots of water color that you want to fix with a clean brush and clean water you can dab 90% of the color away from the paper. If you use water color paper, it will not crumple. But the main thing about water color is you just have to be patient. You have to wait for things to dry before you move on in a lot of cases. You just can’t slap the shit on there and expect it to look good.
Also, there are tons of techniques you can use when it comes to water color. Just google “water color techniques” and I am sure you can find something that will help you get the effects that you desire.
Oh yeah. And practice. It is hard medium to control but not a hard one to use. Try painting with no goal in mind.
